On the Riviera – An All Rosé Wine Dinner In Collaboration with HONOLULU Magazine

At MARA, where our heart and soul are rooted in the Mediterranean, what could be more quintessentially Mediterranean than rosé? When traveling to the Mediterranean and dining in a small café or bistro, there's often a sweating, unlabeled carafe of pink wine—something super crisp and refreshing, meant to cleanse your palate and wash the food down.  This is the experience we aim to capture with our upcoming Rosé Shades of Summer Wine Dinner. 


By exploring the world of rosé through the lens of some of the best examples globally, we'll taste rosé from Greece, Spain, Corsica, and Sicily. Each of these wines is unique, offering its own dynamic expression, so you can gain a deeper understanding of what rosé truly has to offer.


Marquiliani ‘Rose Gris’ x Kona Kanpachi Crudo
This Kona Kanpachi Crudo calls for a wine that bridges the gap between white and rosé wines. The crisp, refreshing Marquiliani Rosé from Corsica is the perfect choice to cleanse the palate between bites. Often described as akin to drinking a cloud, Marquiliani’s lightness and refreshing quality act like cranberry sauce at Thanksgiving, complementing and cleansing the flavors with each sip.


Skouras ‘Zoe’ Rosé x Beet Gnocchi ‘Saganaki’ 
This wine hails from the Peloponnese region of southern Greece and is crafted by George Skouras, a true winemaking “game changer” responsible for bringing Greece into the modern era of winemaking. While Greece has a long history of wine production, it is George Skouras who has helped elevate the quality to world-class standards.


The phrase "what grows together goes together" perfectly captures the essence of this pairing. We are featuring a true, artisan, handcrafted rosé from Greece, thoughtfully paired with a dish that shares the same authentic spirit.


Terre Nere Etna Rosato x Grilled Octopus ‘Kokkinisto’ 
At Mara, our soul is rooted in the Mediterranean, and what could be more quintessentially Mediterranean than rosé? Now, consider what style of rosé embodies the Mediterranean in profile more than one from Sicily and the hillsides of its active volcano—Mt Etna.  This wine has major star power, and we are thrilled to feature it in a pairing with our Grilled Octopus ‘Kokkinisto’, a dish completely inspired by the foods of the Mediterranean.


Raúl Pérez ‘Arrotos del Pendon’ x Roasted Duck Breast 
Raúl Pérez is considered by many to be our generation’s wunderkind winemaker, redefining how to grow & make wines in homage to the methods of his forefathers, & embracing tradition, culture & sutainability. 


Arrotos del Pendon is a wine that challenges the very definition of rosé. Brash, savory, and unapologetically bold, it steps into the role of a lighter red wine—something increasingly rare in today’s world. This is a wine that absolutely deserves a place at your dinner table, and we invite you to discover why together.


Patrick Bottex ‘Bugey-Cerdon’ x Basque Cheesecake 
This wine hails from Bugey, a fascinating little region on the western edge of the Alps between Savoie and Jura. Crafted by Patrick Bottex, a winemaker who specializes in the rosé colored, perilously lighthearted sparkling wine made using the méthode ancestrale. Patrick's Cerdon is so lively and playful that it’s easy to overlook the region it comes from and the back-breaking labor required to produce it.


This wine dances across the palate, just sweet enough, with aromas of strawberries and roses. Great wine doesn’t always need to be thought-provoking or meditative—Patrick's Bugey-Cerdon is proof that a top terroir can manifest itself in the most festive and carefree of ways.
